Soy Lecithin

Extracted from soybean oil and is generally used as a natural emulsifier or stabilizer in various food applications.

Soy Lecithin is a complex mix of natural phospholipids and works as a dispersing, wetting and emulsifying agent in many food applications.

By reducing the interfacial tension between the water phase and fat phase in emulsions, a fine water droplet dispersion is created.
